Magi isnt medieval, but very much fantasy
Attack on titan is good combat, fantasy but not medieval, good characters
I think you would really love grimgar of fantasy and ash. Hits all the marks, and thecombat is twisted in a really nice and unexpectedly rare way
Akame ga kill not medieval, but hits the other points.
Recommending gurren lagann again, not medieval but awesome

If you do manga and you like Berserk, then I recommend Vinland Saga. It’s got Vikings in it.

An example being something like overlord I assume?
Rare to find a show with little combat but still prevelant. Everything is in varying levels.
Maoyuu maou yuusha is the closest thing ive seen to spice and wolf, and has about the same amount of combat as well. I believe this is another good pick for you.
Black bullet is a underrepresented show,
Has a large portion of combat, but I enjoyed the characters.
